Whip up a batch of these Feta-Olive Bison Sliders for your next BBQ or summer party! They’re gluten free, low carb, keto, and DELICIOUS!

These feta-olive bison sliders are packed with tons of flavors and sure to be a huge hit at your summer bbq! Enjoy them as sliders, or on a salad like I did here!

I partnered with my friends at Lindsay Olives to make this recipe. As always, all opinions are my own!

Well…. it’s officially summertime and that means it’s officially burger season! I don’t know about you, but I never get tired of a good burger. There are literally SO MANY combos you can make using different proteins and flavor add-ins. These feta-olive bison sliders are packed with allll the flavors: feta, Mediterranean Medley olives from Lindsay Olives, fresh garlic, fresh herbs (I used flat leaf parsley, cilantro, and mint!), and a fun secret ingredient, lemon zest!

Although I used bison for this recipe, I have used grass fed ground beef as well as half ground beef and half ground pork. And, I’m sure lamb, chicken, and turkey would all work really well too! So, have at it and use any of those!

Another note… I served these cute little sliders on salad situation, but you can absolutely eat them on mini buns if that’s your thing!

Okay, now about the star ingredient… Mediterranean Medley olives. These are some of my favorite olives from Lindsay Olives. Typically, I’ll have anywhere from 3-5 jars of olives open in my fridge at all times for snacking purposes! Olives are one of my favorite go to snacks for a few reasons. They are tangy and salty (my fav), they are high in good for you monounsaturated fat, they are low carb and keto friendly, and they are DELICIOUS!

So, these are super simple to assemble and you can actually make them into whatever size you want. I made them into roughly 2 ounce sliders, but you can absolutely make them into full size burger patties, or even meatballs!

Also, feel free to cook these in the oven, on the grill, or on the stovetop like I did here. It really is a personal preference and I switch it up based on how I’m feeling or how hot it is outside! Sometimes it’s just no fun to be standing over a hot grill when it’s 110 degrees outside! #amiright?!

Feta-Olive Bison Sliders

  • Prep Time: 5 minutes
  • Cook Time: 6 minutes
  • Total Time: 11 minutes

Ingredients

  • 2 lbs bison, ground
  • 4 ounces sheeps milk feta, crumbled
  • 1/2 cup Mediterranean Medley Lindsay olives, chopped
  • 1/2 cup fresh herbs, chopped (parsley, cilantro, mint)
  • 1 tbsp lemon garlic seasoning
  • 1 tsp sea salt
  • 1 tbsp lemon zest
  • 1 tbsp extra virgin olive oil

Instructions

1. In large bowl, add all ingredients and mix together gently until everything is well incorporated.
2. Cook to desired doneness either in stove, on grill, or on stovetop. I cooked on stovetop in a cast iron skillet over medium heat for approximately 2-3 minutes each side. This will vary depending on burner output and how thick your sliders are.
3. Serve with a salad of mixed green, cucumbers, and tomatoes!!
