You’re gonna love this super simple cheese endless summer mozzarella cheese board with Italian chimichurri as an appetizer. Preferably enjoyed with close friends and a glass of chilled rosé.
2 packages BelGioioso Sliced Fresh Mozzarella
Heirloom tomatoes, quartered or sliced
GF crackers or sliced crusty sourdough bread
1 cup fresh Italian parsley, rough chopped
2 cups fresh basil, rough chopped
3 cloves garlic, rough chopped
1 cup extra virgin olive oil
1/8 cup red wine vinegar
1/8 cup fresh lemon juice
2 tbsp Dijon mustard
¼ cup capers, plus 1 tbsp caper juice/brine
1 tsp red pepper flakes
sea salt and pepper, to taste
Assemble your cheese board with the fresh mozzarella, tomatoes, cucumbers, crackers/bread, and chimichurri sauce. Drizzle mozzarella with chimichurri and ENJOY outside with friends and a glass of rosé!
