Endless Summer Mozzarella Cheese Board with Italian Chimichurri

There’s nothing better than heirloom tomatoes at their peak paired with super fresh and creamy fresh mozzarella, am I right?! You’re gonna love this super simple endless summer fresh mozzarella cheese board with Italian chimichurri as an appetizer. Preferably enjoyed with close friends and a glass of chilled rosé.

You guys know I’m obsessed with putting chimichurri on everything, right?! My most popular recipe is my cilantro chimichurri, and I’m kinda known as the chimi queen amongst my Insta followers.

Well guess what… I made an Italian version to pair with fresh mozzarella and super ripe tomatoes. I think you’re going to fall in love, like I have.

I’m so excited that I get to work with amazing brands like BelGioioso, who makes the most delicious fresh mozzarella and burrata cheeses. (Side note: I fell in love with burrata last year while traveling around Europe and eating the most amazing pizza in Florence, Italy that was topped with burrata. It was out of this world.)

Here’s why I love BelGioioso:

They are committed to excellence and use recipes for making traditional Italian cheeses that were passed down for generations from Errico Auricchio’s great-grandfather. Auricchio along with his wife and children moved to America in 1979 to carry on the Italian cheese-making tradition and aren’t we so lucky!

A great quality product starts with great quality ingredients. When Auricchio moved to the states, he wanted to find a source for the best quality milk to use to make his cheeses. He discovered Wisconsin, “America’s Dairyland,” with dedicated farmers and abundant green pastures that produce superior milk.

I love that the milk that’s used to make the cheeses is antibiotic free and the farmers certify they don’t use any artificial growth hormones (rBST). I’ve talked about it many times, but it’s so important to me to find products that don’t contribute to hormone disruption, especially with so many women, including myself, are already dealing with wonky hormones.

It’s these traditions + the selection of the best-sourced ingredients that make BelGioioso the best Italian cheesemakers in the US.

Back to the endless summer cheese board!

I knew I wanted to create a super simple summer cheese board situation using the fresh mozzarella, heirloom tomatoes and basil. This cheese board is kind of a play on the beautiful flavors of the classic Italian caprese salad.

I found some gorgeous heirloom tomatoes at my local grocery store and knew they’d be delicious drizzled with a chimichurri using primarily basil as the main fresh herb.

This Italian “chimichurri” was inspired by my love of a salsa verde that used to be served at one of my favorite restaurants I frequented when I lived in Redding, CA. It was so so good served with warm sourdough bread that they used to bring to the table as a starter. But when I went gluten free and could no longer eat the bread, I would still enjoy the sauce it by the spoonful and even ask for more to drizzle on whatever main dish I ordered, haha!

Get ready to impress your friends with the combo of this vibrant sauce paired with fresh and creamy mozzarella and ripe and juicy summer tomatoes. I threw on some of my favorite gluten and grain free crackers and some crisp cucumber slices to enjoy with the cheese board.

This recipe is so easy and comes together in a matter of minutes! Just grab your food processor and all your ingredients and it’ll be done in no time.

Make sure you rough chop your fresh herbs and garlic prior to adding to food processor so you get an even consistency with your sauce.

Ingredients

Cheese Board:

2 packages BelGioioso Sliced Fresh Mozzarella

Heirloom tomatoes, quartered or sliced

Cucumbers, sliced

GF crackers or sliced crusty sourdough bread

Italian Chimichurri:

1 cup fresh Italian parsley, rough chopped

2 cups fresh basil, rough chopped

3 cloves garlic, rough chopped

1 cup extra virgin olive oil

1/8 cup red wine vinegar

1/8 cup fresh lemon juice

2 tbsp Dijon mustard

¼ cup capers, plus 1 tbsp caper juice/brine

1 tsp red pepper flakes

sea salt and pepper, to taste


Instructions

 

In a food processor, add all ingredients except olive oil. Pulse a few times to combine ingredients, then turn processor on and pour olive oil through the chute while running until just combined.

Assemble your cheese board with the fresh mozzarella, tomatoes, cucumbers, crackers/bread, and chimichurri sauce. Drizzle mozzarella with chimichurri and ENJOY outside with friends and a glass of rosé!
