Turmeric Chicken Collard Wraps

It’s summer and it’s hot, so I’m always looking for fun meal ideas that don’t require me to turn on the oven. These turmeric chicken collard wraps are a perfect lunch option when you want a no cook meal. With just a handful of ingredients and you’ll have a quick and easy, no-cook, protein-packed meal. The key to this meal is to have some cooked chicken breast already to go in the fridge. I admit, I’m not the best at this, but I’m working on getting better. I swear I’m running to the store pretty much on the daily because I haven’t been planning my meals very well lately.

I’m typically cooking a few meals on Sunday to last for a couple days, like burger patties or even just seasoned ground beef so I can whip up some tacos on a moment’s notice. However, it’s on my to do list to get more organized with my cooking, especially since I don’t want to be slaving away over a hot oven this summer in this heat. And there are virtually ZERO good places to eat out here in Redding. So, there’s that <sigh>. Everyone here always tells me I should open a restaurant. I’m thinking, are you guys crazy?! That’s some seriously hard work and I’m in no place right now for that in my life. I’m trying to reduce all the stressors in my life, and opening a restaurant is like the total opposite of that.

Speaking of reducing stress in my life. A big thing happened this month. I’m no longer doing that stressful job that I have been doing for the past 4 years! I’ve actually be taking some time off for the past couple months on a leave of absence, and then BOOM. I found out while on leave my whole department, plus many others, got laid off. Funny how the universe works in mysterious ways sometimes. And, I’m not super upset about this at all. Just sayin’. I’ve been battling some serious adrenal issues, Epstein-Barr virus got reactivated, SIBO is back (FML!), autoimmune stuff, and a slew of other things all interrelated and driven mostly by STRESS.

I’m learning lots in my Nutritional Therapy program about ALL the dysfunctions going on and the WHY behind it all. I’ll be starting to share more of my health journey now that I am in a better state of mind to blog more consistently. My hope is that I can share my struggles and successes along the way so I can maybe help just one person who is dealing with chronic health issues. It’s no fun sometimes, but I’m feisty AF, and that’s been one of the things I think has served me well during some of these hard times over the past few years. I know that I’m on this path for a reason and I’m embracing all of the things I’m learning about myself along the way, the good, the bad, and the ugly.

Whoa… okay, okay. Back to the chicken wraps. So, the idea of these came from seeing chicken curry all over the place lately, but I didn’t have any curry powder on hand. What I did have though, was turmeric powder. And, I’m LOVING alllllll things turmeric these days. Turmeric is SO HOT right now! Well, actually, it’s so anti-inflammatory, and that’s just one of the many benefits about it that I’m in love with. The rest of the ingredients I mixed in are, well, they are what I had on hand and I thought they’d pair nicely. Which they DID! YAYYYY! It seems like I’m always pretending I’m on an episode of Chopped, throwing meals together with what I find in the fridge and my cupboards. It’s pretty fun and I love playing around with flavor combos.

Here are some things you may need (affiliate links):

Organic turmeric powder

Organic raw walnuts

Garlic seasoning

Mixing bowl

Knife

Cutting board

TURMERIC CHICKEN COLLARD WRAPS

ingredients
2 chicken breasts, cooked and chopped
1/2 cup Paleo mayo
1 tbsp turmeric powder
1 tsp garlic seasoning
2 celery stalks, chopped
1/2 cup walnuts, chopped
1/2 cup blueberries
shredded carrots
shredded purple cabbage
collard green leaves
directions
In a bowl, mix together turmeric, garlic seasoning and mayo until combined.
Add chopped chicken, celery, walnuts, blueberries, and stir to combine.
Place about 1/2 cup of mixture on a collard green leaf, add shredded carrots and purple cabbage and wrap like a burrito.
Continue until mixture is gone. Enjoy!
