Instant Pot Harissa Picadillo (Keto)

Instant Pot Harissa Picadillo - this dish is bursting with flavors and perfect for a quick weeknight dinner or your weekly meal prep!

Picadillo. It’s damn delicious and super versatile. And if you haven’t made had it, you should definitely make this recipe!

In a quick google search, Picadillo has origins from Latin America, Mexico and the Philippines. It’s a traditional comfort food dish made with ground meat, tomatoes, warm spices, raisins, and olives. You can enjoy it many different ways including as filling for empanadas, enchiladas, tacos, burritos, or in a bowl with rice or on a salad situation like I did here. I mean really, you can just eat it in a bowl with a spoon if you want.

The real star of this instant pot harissa picadillo is the olives. I used green olives that are in a harissa infused marinade blend from Lindsay Olives which adds a complex and smoky component that compliments the warming spices of cumin and cinnamon in this dish. I couldn’t let the marinade go to waste, so I added in the recipe for the liquid element. Some recipes use more tomato sauce or even wine, but harissa infused olive marinade sounded amazing to me!

You’re gonna love how easy this dish is to make in your instant pot, and from start to finish you’ll be done in under 30 minutes.

Here’s what you’ll need:

  • instant pot
  • cutting board and favorite knife for chopping the veg
  • about 1 - 1 1/2 lbs of ground meat
    • (I used grass fed ground beef, but you could try ground turkey, ground pork or even a combo of these. If you use ground pork, you’ll most likely need to drain the excess liquid/fat after browning it)
  • tomato sauce
  • tomato paste
  • green bell pepper
  • red onion
  • garlic cloves
  • harissa infused olives plus liquid
    • (any good green olive will do, but the harissa infused marinade adds some extra flavor points)
  • cumin, oregano, cinnamon, sea salt, bay leaves
  • extra virgin olive oil

Enjoy your instant pot harissa picadillo in a big ass salad with some cauliflower rice and avocado for a super satisfying low carb/keto meal!

Ingredients

1 1/2 lbs of ground meat

1 16 ounce can tomato sauce

2 tbsp tomato paste

1 green bell pepper, diced

1 red onion, diced

3 garlic cloves, minced

1 cup harissa infused olives

1 cup liquid marinade from olive jar (or substitute with beef broth/wine)

1 tbsp cumin

1 tbsp oregano

1 tsp cinnamon

1 tsp sea salt

2 bay leaves

2 tbsp extra virgin olive oil

Garnishes:

cilantro

avocado

more olives

fresh tomatoes


Instructions

Set instant pot to Saute mode and add olive oil, then ground beef. Saute until beef is browned and no longer pink.

  1. Add all remaining ingredients stirring well, then change mode to Manual (make sure steam valve is closed) and adjust time to 8 minutes.
  2. Once time is done, carefully release the steam manually using a dish towel to turn the valve to open. (I set the instant pot on my stovetop underneath the vent and turn the vent on when I release the steam)
  3. Depending on how much liquid there is, you can set to Saute mode again to reduce liquid. Just make sure to stir frequently until desired results.
  4. Enjoy your picadillo as a topping for a big ass salad, or as a filling for tacos, enchiladas, burritos or empanadas!


Notes

  1. Feel free to use any ground meat of your choice. I used ground beef here but ground turkey or ground pork would work nicely here. If you use ground pork, you may need to drain the excess liquid/fat rendered after you brown the meat.
  2. Any good green olive will do, but the harissa infused marinaded olives from Lindsay Olives is great since I used the liquid and it adds some extra flavor points!
