Gluten Free Carrot Cake Waffles

Waffles. Who doesn’t love them?
I love a good waffle from time to time, but let’s be real for a minute… I don’t bake very well. And by bake, I mean make something from scratch that requires sciency stuff to happen. This leaves me few options when looking for a pancake/waffle mix at the store because I really don’t do great with all the gluten free starches and flours in most of them. I was super excited when I came across Simple Mills brand of mixed because they are super clean and in addition to being gluten free, they are also grain free using almond and coconut flours!
I’d been really craving carrot cake the other day, so of course this was my chance to make something carrot cakey happen! I love embellishing my favorite store bought clean mixes and making them my own. Kinda like Semi-Homemade with Sandra Lee! Tell me I’m not the only one who would watched her show!
Anyway, I packed some extra nutrients in these to give my breakfast a little more bang. Shredded carrots, clean protein powder, flaxseed, and cinnamon and spices to give it the carrot cake feel. As far as toppings goes, you can definitely make a cream cheese type frosting here, but I stuck with the healthier options like chopped pistachios, more shredded carrots, shredded coconut flakes, pure maple syrup and some coconut milk yogurt! Hubby insisted on frosting, since he doesn’t exactly eat the same as me 😉
