Sun-Dried Tomato Vodka Sauce

Sun-dried tomatoes + vodka + raw heavy cream equals a recipe for some serious deliciousness, don’t you think?! Plus, I AM part Ukranian, and, well… vodka, duh.

Okay, pasta isn’t something that I eat on the regular, and actually, if I’m being honest, I’ve only eaten it a few times over the past handful of years. Why? Well because I just don’t love any of the gluten free products very much when it comes to pastas. BUT, I do have a carb loving, gluten-eating husband who enjoys his pasta very much. And for myself, I just simply substitute in some zucchini noodles or enjoy my sauces served over a bed of steamed veggies. That’s just how I like things.

Back to this saucey goodness.

I remember watching a Rachel Ray episode YEARS ago and she made a vodka sauce called “You Won’t Be Single for Long” vodka sauce or something like that. Ever since then, I’ve always wanted to make one, so I finally did.

Building layers of flavor into my recipes is fun and I always try to think of different ways to do that so I get some depth. The Amore brand sun-dried tomato paste was such a winner for this and added a super rich complexity to this sauce that you’d think was cooked for hours! For good measure, I added in a small handful of actual sun-dried tomatoes since I had them in the pantry.

For the creamy component of this vodka sauce, I went ahead and indulged with some raw heavy cream, since I also had that on hand. I’ve been using it in my coffee and it’s so dang good! If you want to keep this dairy free, I’d suggest using coconut cream, which you can find at Trader Joe’s. Or you can just as easily refrigerate a can of full fat coconut milk, and scoop out the solid cream.’

I think you’ll love how quick and easy this sauce comes together, and it tastes like you’ve been slaving away for hours in the kitchen!

I used my Vitamix to make it really creamy at the end, but you can also use an immersion blender right in the pan if you’d like.

Get your taste buds ready, cuz this one’s gonna be a crowd pleaser!

SUN-DRIED TOMATO VODKA SAUCE

ingredients

2-28 oz cans crushed tomatoes
1 cup gluten free vodka (I used Tito’s)
1/2 cup raw heavy cream (or coconut cream)
1 tsp oregano, dried
1 tsp basil, dried
1/2 tsp red pepper flakes
3 Tbsp Amore brand Sun-Dried Tomato Paste
1/2 cup sun-dried tomatoes
2 shallots, chopped
2 Tbsp extra virgin olive oil
Sea salt and cracked black pepper, to taste
1 Tbsp coconut sugar (optional)

directions

In a large pot/skillet, heat olive oil over medium heat, then add shallots. Cook 2-3 minutes until soft and translucent.
Add remaining ingredients, EXCEPT cream, and stir to combine. Reduce heat and simmer about 20 minutes.
Turn heat down to low and add cream. Taste and adjust seasonings if necessary.
Carefully puree sauce in batches in your high powered blender, or use an immersion blender right in the pan.
Serve over your favorite noodles, fresh filled pastas (like the Amore Brand Four Cheese Ravioli I served for hubby), or zoodles (like I had!)
