Spicy Cilantro Sauce

Spicy Cilantro Sauce

By now you should know how much I love all things cilantro, especially cilantro chimichurri. And then I heard about this sauce called zhug from one of my Instgram followers who knows how cilantro-obsessed I am. Zhug is really similar to chimichurri, and heck spicy, so I knew I had to try to recreate it. Here’s my spicy cilantro sauce.

This sauce is amazing on pretty much anything and everything, but especially on steak. I’ve had it on grilled flank, crispy chicken thighs, and even veggies. I love and use FlavorGod seasonings in most of my recipes, so if you don’t have those at home, no problem! Just use your favorite Garlic Seasoning in place of the Garlic Lovers, and use Himalayan sea salt in place of Pink S+P! Give it a try!


SPICY CILANTRO SAUCE

ingredients
2 bunches cilantro, stems and leaves chopped
3 garlic cloves, chopped
3 dried chile de arbol chiles, seeded and chopped (can also use jalapenos)
1/4 cup extra virgin olive oil
1 tsp lemon juice
1/2 tsp lemon zest
1 tsp FlavorGod Pink S+P (or Himalayan sea salt)
1 tsp FlavorGod Garlic Lovers (or your favorite garlic seasoning)
1/4 tsp coriander seeds
1/2 tsp cumin seeds
3 cardamon pods, use only seeds inside (or 1/4 tsp ground cardamom)

directions

In a spice grinder, grind coriander seeds, cumin seeds, and cardamom. Transfer to a food processor and add everything EXCEPT olive oil and lemon juice.
Pulse until mixture is well combined and resembles a thick paste. Scrape down sides, then with food processor running, stream in lemon juice, then olive oil. You should have a nicely emulsified sauce.
This sauce will keep for 1-2 weeks in refrigerator. Use in place of pesto for a spicy alternative, or where you would use a chimichurri.
