Try this Mexican-inspired Cinco de Mayo charcuterie board for your weekend gathering! It’s perfect finger food for entertaining and guaranteed to be a crowd pleaser!

You guys! I totally love a good charcuterie board and I totally love Cinco de Mayo, so I combined the two for a fun Cinco de Mayo charcuterie board that you can make to feed all your pals!
This non-traditional approach to a classic appetizer is so fun because you can literally customize the ingredients and use your fav meats and cheeses. I picked a few Mexican-inspired meats, cheeses, and low carb veggies.
Meats: picante salami, dry cured chorizo, jamon iberico (or prosciutto)
Cheeses: cotija (crumbly), manchego (hard), queso de cabra or queso fresco (soft)
Veggies: cucumber, radish, baby romaine, jicama, sweet peppers, cilantro, pickled red onions, pickled jalapenos
Dips: guacamole, salsa
Garnishes: olives, limes, cilantro, marcona almonds
This Cinco de Mayo charcuterie board is naturally gluten free and keto friendly. I added some grain free chips on the board for the heck of it, but the veggies are great for dipping into the guac and salsa too. I love the new jicama slices you can find at your grocery store for a fun low carb option to wrap up some meat and cheese into a bite size taco situation.
One of my favorite keto friendly ingredients on a charcuterie board is definitely olives. Olives are a perfect addition because they are flavorful and salty and a good source of quality fats. My friends at Lindsay Olives make the best olives (IMHO!)

Instructions
Assemble on a large platter/cheese board and ENJOY!
