This salsa verde chicken is the perfect filling for tacos, burritos, enchiladas, and chilaquiles, and is super freezer friendly for make ahead meals!

This post was created in partnership with my friends from KitchenAid! Prep was super simple thanks to my KitchenAid® Artisan® Mini Stand Mixer and with Food Processor attachment. They supplied me with their product, but all opinions are always my own.

I know there are a million recipes on the inter-webs for salsa verde chicken, and I’m not really reinventing the wheel here. I’ve seen recipes that use slow cookers, pressure cookers, oven baked and made on the stove top. I opted to just do this one on the stove top since I wasn’t too concerned about this recipe being hands off….

March 31, 2017 By Natasha Leave a Comment

Get ready to put this ish on EVERYTHING! If you like cilantro as much as I do, this cilantro chimichurri will become your new BFF!

If you like cilantro, this cilantro chimichurri is gonna become your new BFF condiment for all your meats, veggies, and eggs!

Okay, here’s the deal… my love for cilantro runs deep. So deep that my blood is probably green. Okay, maybe not that deep. But you get it. Plus, I don’t love parsley very much. So, when making a chimichurri, I just had to do an all cilantro version. I know, I know, this is not a totally authentic Argentinian version, so there’s that. This cilantro chimichurri is packed with tons of fresh, herb-y flavor from the cilantro and garlic….

Pickled red onions are my new favorite condiment. Like for reals. First of all, can you even with this color? It’s seriously the prettiest color pink ever. That’s the first reason why I’m obsessed with these beauties: their color. Second reason, they taste amazing. SO FREAKING GOOD. …

Low Carb Mexican Style Shepherd’s Pie

Low Carb Mexican Style Shepherd’s Pie

low-carb-mexican-style-shepherds-pie

It’s creamy. It’s delicious. It’s hecka nutritious. It’s a Mexican version of the comfort dish, Shepherd’s Pie. Traditionally, this recipe would use a mixture of meat and veggies with mashed potatoes as the “crust” for the top. When using beef, it’s called “cottage pie,’ and when using lamb, it’s called “shepherd’s pie.” My rendition uses grass fed ground beef and whipped cauli mash, and I still called it a shepherd’s pie, why? Because I’m a rebel at heart and like to break the rules! That’s why. Actually, I’m a total rule breaker when it comes to cooking, amongst other things <insert feisty smirk face.>…

So, about carnitas. Ask my family and they’ll tell you that pork carnitas are my absolute FAV thing to order at Mexican restaurants. I mean, FAVORITE. It’s the thing that I get all judgy on when I go to new restaurants. If their carnitas are good, the restaurant gets a thumbs up from me. Jalapeno Cranberry Salsa

jalapeno-cranberry-salsa

This jalapeno cranberry salsa was such a huge hit at our Thanksgiving dinner this year, that we’re making again for Christmas. I wasn’t able to get my shit together until now to post this recipe for you guys, but I guess better late than never, yeah?

This versatile salsa is great as an appetizer served with your favorite cheese spread and chips or crackers. My mom makes her famous cheese platter with dried fruit, ALL the cheeses- think goat cheese, brie, cream cheese, etc, persimmons, and nuts. We also served it alongside the cooked cranberry sauce as another option with the roasted turkey, and it was amaze! I wonder how it would be with some pork tenderloins??…

Spicy Cilantro Sauce

By now you should know how much I love all things cilantro, especially cilantro chimichurri. And then I heard about this sauce called zhug from one of my Instgram followers who knows how cilantro-obsessed I am. Zhug is really similar to chimichurri, and heck spicy, so I knew I had to try to recreate it. Here’s my spicy cilantro sauce….

Rosemary Potatoes Anna

ROSEMARY-POTATOES-ANNA

So, it’s Mother’s Day weekend and I’m not gonna see my momma <insert sad face emoji.> But, I did make a dish in her honor. You see, the dish potatoes anna is a classic French dish called pommes anna. Potatoes are sliced thinly, layered, and cooked in copious amounts of butter. Gotta love the French! Why is this dish in my mom’s honor? Well, we are part Frenchie! My mom’s side of the family tree has relatives from Lerrain, a small commune in northeastern France. I’m dying to go visit the beautiful French countryside and see where my family is from and hopefully I can do it with my mom!…
